Let’s go tropical with this islander breakfast. Sweet kiwi fruit, golden mango and creamy banana, a wonderfully bright and exotic breakfast that is sure to start your day off right.
The kiwi in this breakfast recipe brings such refreshing qualities, contrasting sweet elements with a tartness. Kiwi is a healthy choice for fruit as it can support digestive health, immunity and is high in Vitamin C.
Mangoes are one of my favorite fruits! The obsession began as a child when I lived in Queensland, mangoes were in abundance and we used to pick mangoes off neighboring trees. Mangoes are absolute gold in my eyes with their creamy dessert worthy flavors. Mangoes are rich in vitamin C which can aid in collagen production and The antioxidants in mangos have been shown to fight free radicals.
SERVES 2 COOK 10 minutes
2 Kiwi fruit
6 tablespoons vanilla yogurt
½ cup Granola
4 tablespoons chia seeds (recipe here)
1 cup coconut milk
½ Banana
½ Mango
Select peeled and sliced fresh kiwi fruit to create volume and dimension.
Showcase fruit by positioning and layering around the bottom sides of glass or mason jar
Create a 2cm thickness of granola as a bottom layer
Pour vanilla yogurt slowly, as you don’t want the layers to sink into each other.
Top yogurt with coconut chia seed pudding. Instead of water in the chia pudding recipe here, replace it with coconut milk. Ensure you have made chia seed pudding in advance to achieve optimal thick gel-like texture.
Limit the amount of liquid, you want the layers to have a compact consistency as opposed to watery
Place chopped bananas and mango on top.
Sprinkle any remaining granola to your desire for that extra crunch.
